- 1 lb. fresh sea scallops
- 2 tbsp. butter
- 2 tbsp. olive oil
- Salt and crushed pepper, to taste
- Lemon wedges for serving
- Sprinkle the scallops with salt and crushed pepper on both sides. In a non-stick skillet, heat the butter with olive oil over moderately-high heat until the butter is melted and the pan is hot.
- Add the scallops to the pan, leaving enough space between them to avoid overcrowding. Cook the scallops on each side for about 2-3 minutes until they are golden brown, crispy outside, and opaque in the center.
- Remove the scallops and serve them hot with lemon wedges.
